Today, I was in the mood for baking. And when those moods come along, I find it a good opportunity to try something new. I decided on a passionfruit sponge since I’d never made one before, and I had a string bag of plump and juicy passionfruits sitting in the fruit bowl. The cake turned out well – light and fluffy with a delicious vanilla flavour throughout. A lesson I learnt for next time: always sift your icing sugar. Unless you want lumpy icing. Which I promise you, you won’t ever want.
