White Chocolate Rocky Road
Ingredients
350g good quality white chocolate
100g shelled pistachio nuts (whole)
100g Macadamia nuts, chopped in half
1 cup dried cranberries
1 packet white & pink marshmallows, chopped in half

Instructions
1. Line 2 x loaf tins (or 1 x square tin) with baking paper
2. Prepare all ingredients (except the chocolate) as required and place together in a large bowl
3. Using a bowl over a saucepan of simmering water (making sure the water does not reach the bottom of the bowl), melt the chocolate over a low heat
4. Once melted, pour into bowl of ingredients and stir well to combine
5. Spoon mixture into tins to desired thickness (around 5cm works well)
6. Place in fridge until set
7. Once set, using a sharp knife, chop into squares
8. Keep in a sealed container in the fridge (if it lasts that long!)
