Chocolate Brownies


Recipe from 17 February issue of Brisbane News


240g unsalted butter
170g dark chocolate
200g caster sugar
4 whole eggs
Vanilla essence
360g plain flour
Pinch of salt
120g white chocolate, roughly chopped in quite large pieces


1. Preheat oven to 170 degrees and grease a 18x28cm tin (I used a springform round tin and loaf tin)
2. In a medium saucepan, over a low heat, melt dark chocolate and butter until combined
3. Remove from heat and stir through caster sugar, salt, eggs, vanilla essence and flour
4. Stir well to combine and pour into tin(s)
5. Press white chocolate pieces into tin
6. Bake in oven for 20-25 minutes
7. Allow to cool in tin and remove to slice into pieces. Keep refrigerated until ready to eat.
