From Garden to Plate: Zucchini & Coconut Bread

I mentioned earlier in the week that we had grown the most enormous zucchini I have ever seen.  I was so proud when I found it, I ran down to Adam with the biggest grin on my face.  And we called out to both neighbours to tell them the exciting news.  I’m certain they think we’re mad.  But now, what to do with a zucchini so big?  This recipe for toasted coconut and zucchini bread caught my eye so I gave it a try.  It is a surprisingly delicious combination – the nuttiness of the coconut goes perfectly with the zucchini.  And the finished product is not unlike a sweet banana bread.  I foolishly tried to add more zucchini than the recipe called for which made the bread more dense than I would probably choose {why don’t I ever learn that baking recipes are not to be meddled with!?} However, still a delicious cake-like bread which I’ve cut into slices and frozen, ready for popping in the microwave {or toaster for that matter}, a light spread of butter and a sprinkle of icing sugar.  Delish.
