Locked and Loaded

I was given a brief recently that went something along the lines of this: a side dish for an evening BBQ to feed around twenty people.  After some searching, I found this recipe for loaded potato skins and since it satisfied all of the mentioned requirements set to making a few batches.  I tripled the recipe and made them the day before, re-heating them in the oven just before they needed to be served.  While they aren’t the healthiest of options, they went down a treat.  A great, simple recipe to keep in mind when you’re feeding lots of people.
