A {Treat} Dinner For Two

On weeknights, we usually eat the same types of meals from week to week.  Those meals that are convenient, easy to make in big batches and that we never seem to tire of – spaghetti bolognese, green stir fry, chicken korma, pasta with vegetables {like this one or this one} or vegetarian lasagne.   I would like to venture out a little more with our mid-week meals, but unless we’re having people over, convenience usually wins out in the end.  In saying this, every now and then, as a sort of treat for ourselves, I like to make a special weekend-esq meal on a weeknight to shake things up a bit.  Something like this parmesan crusted lamb rack with garlic smashed potatoes and steamed greens.  I used this recipe from Bill Granger and the crust on the lamb was SO delicious.  The lamb, tender, the potatoes creamy, greens crisp.  Perfect {special} weeknight dinner.
