Lately I’ve been in the mood for smoothies. For breakfast or afternoon tea or anytime of day really – made with soy milk for that extra nuttiness. Yum. It’s certainly not a new idea but its only something I have started doing recently – when I have excess fruit from the week before’s market shop that hasn’t been eaten I blend them up into smoothie ice cubes. I simply whizz the fruit up with the stick blender, pour the puree into ice cube trays and once frozen, transfer them to a snap lock bag. Then they are ready to make a fruity smoothie at a moments notice. Perfecto.
