With an unwell toddler and a self imposed quarantine, we had a very quiet weekend. I wanted to make something that Jack could eat that was comforting, but also a little bit healthy. Macaroni and cheese is a deliciously comforting dish at any time. With the addition of a layer of spinach, this version adds some super green nutrients which never go astray. I’m going to keep this recipe on file for next time I have a garden full of silverbeet.
