Soup has definitely been the theme for my lunches this winter. I love how warming and satisfying they are on these cold and chilly days. I always have some stock standards in the freezer ready to go: pea & ham, pumpkin and minestrone. But I like to mix it up with a few different varieties. This is a new favourite I’ve discovered. The soup itself is creamy and filling and the spices create something a little more special.
