As our eggplant bushes are so prolific, I am always on the search for new recipes to include them in. This dip is similar to a babaganoush, but with no tahini included, and very simple to make. The finished product would be a welcome addition to an antipasto platter served with some flatbreads, delicious atop a lamb and salad wrap, or, if you’re feeling particularly healthy, as a snack with raw vegetables.
