When Jack was born, good friends of ours gave him ‘The Essentials of Classic Italian Cooking’ by Marcella Hazan as a baby gift. An incredibly thorough, textbook-like cookbook, which outlines everything you could possibly need to know about creating authentic Italian food. Their thoughts were that unlike a toy, or an outfit which he would eventually outgrow, this cookbook is something Jack would benefit from for years to come. I love the idea.
Fresh pasta dough from this book is one of the recipes I have committed to heart. Nothing quite compares to fresh pasta you have made yourself – even the most expensive fresh pasta purchased from a deli misses something. While you can roll by hand, this involves a carefully executed method that takes considerably practice. These days, you can find a pasta machine, which requires no skill, for under $40 and in my opinion, it is well worth the investment.
