{Guilt Free} Snack Time

 

When I worked in the city, I would walk over the bridge on a Wednesday to the Farmers’ Markets and pick up a brown paper bag filled with a tamari almond/pepita/sunflower mix from the fruit and nut stall.  The bag would sit in my desk drawer, waiting for those occasions at around 3 o’clock in the afternoon when I would want to wander to the staff room and buy a packet of salt and vinegar chips from the vending machine.  Instead, I’d have a handful of this mix – nutty and salty and just as tasty as a packet of chips, but without the guilt that follows.

I hadn’t had any in a long time and had never thought of making it myself but when I saw on one of my favourite inspirational blogs, In Spaces Between how easy they were – I gave it a try.  And I’m glad I did.  You simply dry roast the almonds and seeds in the oven first, then transfer them to a pan with around a tablespoon of Tamari and heat until well coated.
