I always prefer having friends over of a weekend rather than mid-week as everyone seems to be more relaxed of a Friday or Saturday evening. But with everyone’s busy schedules, sometimes it’s too difficult to coordinate. On these occasions when we have friends for dinner during the working week, I like having a simple menu – something tasty, communal and satisfying. Which is what our menu last night was. Spicy pulled beef burritos with a lime and mint sorbet for dessert. I used this recipe for the pulled beef which meant I could cook the night before. Then just a little cutting and grating for the accompaniments (cabbage, beetroot, carrot, cucumber, avocado, chilli) and voila – dinner is served.
