Lime Lime Finger Lime

Finger limes are an oddly shaped variety of lime that have bubble-like flesh.  Tiny pale pink pockets that pop when you bite into them, oozing silky, zesty lime juice.  A sort of lime caviar.  A friend has a tree brimming with them and kindly delivered some this week for me to use in a recipe or two.  So…over the next few weeks I’m going to try three different recipes where these limey little gems are the hero of the dish.

Finger LimesFinger limeFinger Lime FleshAlthough I believe oysters are best enjoyed with nothing but a squeeze of lemon and a crack of pepper, I’m open to other variations.  Today – three variations of oysters where the lime caviar complements perfectly. 
{Oysters with sweet soy and lime}
Oysters with Sweet SoyDressing: Equal parts (I used 1 tbs) soy sauce, kecap manis, malt vinegar, diced shallots.  1 tsp chilli oil. A dash of sesame oil and some pickled ginger.  1tbs finger lime flesh.

{Oysters with lemon, lime and cracked pepper}
Oysters with LemonDressing: Juice of half a lemon, dash of olive oil, cracked pepper to taste and pinch of sea salt.  1tbs finger lime flesh.

{Oysters with chilli lime dressing}
Oysters with Chili LimeDressing: 1 tsp caster sugar, 2 tbs lime juice, 1 tbs fish sauce & 1 long red chilli diced. Pinch of sea salt. 1tbs finger lime flesh.

  1. It’s times like this that I wish I lived somewhere warmer – don’t think any citrus will grow in my English garden! My sister in Victoria has a neighbour who grows lemons – homemade lemonade from homegrown lemons is devine 🙂 Thanx for stopping by my blog, Gill
