If you haven’t tried a pimiento – you need to. They taste somewhere between a pepper, a capsicum and a chilli and are simply delicious. My personal favourite variety is the ‘russian roulette’ where 4 out of 5 are mild and subtle in flavour and the 5th is a hot little firecracker in your mouth. It makes for a suspenseful tasting experience. They simply need to be sauteed with some olive oil until suitably charred, and dressed with a squeeze of lemon and a smattering of sea salt. Find them. And try them. I promise you – you will thank me.
